Rustic Pear & Almond Tart

Cocoa Crust

  • 1 ¾ cups all-purpose flour
  • ⅓ cup almond flour
  • 3 tbsp brown sugar
  • ¼ cup neutral oil
  • 4 tbsp cold unsalted butter, diced (½ stick)
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 1 large egg

Filling

  • 4 ripe pears
  • 3 tbsp almond flour
  • 3 tbsp brown sugar
  • 1 egg yolk
  • ¼ cup sliced almonds
  • 1 oz melted dark chocolate (optional, for decoration)

In a large mixing bowl, combine the brown sugar, oil, butter, and vanilla extract. Add the all-purpose flour, almond flour, cocoa powder, and egg. Mix until the dough comes together and the ingredients are fully incorporated. Shape into a ball, wrap, and refrigerate for 1 hour.

Wash the pears, cut them in half, remove the cores, and slice each half into thin slices.

Preheat oven to 350°F. Lightly flour your work surface and roll out the dough to about ⅛ inch thick. Sprinkle the center with almond flour, leaving a 1½-inch border around the edges. Transfer the dough to a baking sheet lined with parchment paper.

Arrange the pear slices over the almond flour. Fold the edges of the dough up over the pear filling. Brush the folded edges with the egg yolk. Sprinkle the edges with brown sugar and sliced almonds. Bake for 25–30 minutes, until golden.
